Bravo Farms adds aging rooms, retail store
TULARE, Calif.-The Bravo Farms Cheese Factory is expanding its facilities to accommodate increasing sales.

The company is building a new Bravo Farms Restaurant and Cheese Shoppe at the Preferred Outlet Center here. The restaurant will serve fresh salads, sandwiches, beer and wine, and The Cheese Shoppe will feature all the Bravo Farms favorites, such as Silver Mountain Aged Clothbound Cheddar, Original Chipotle Cheddar, Artisan Pepperjack, Premium White Cheddar, Western Sage Cheddar, Dutch Style Gouda and the Tulare Cannonball.

In addition to the new restaurant and cheese shop, the company is also building more aging rooms to accommodate the skyrocketing sales of its aged cheddar. Retail sales at the factory are up 50 percent over last year, reflecting the company's resistance to the down economy.

With the high level of traffic that flows into the Bravo Farms location in Traver, Calif., the company said it was a necessity to open another location. The goal is to create even more loyal fans of Bravo Farms' cheeses, and the best way to do that is to allow customers to sample the product. "You can write about how great it is on the package, but until they try it, you're just another cheese in the case," said Jonathan Van Ryn, co-owner of Bravo Farms, in a prepared statement.

Bravo Farms' cheeses are distributed in California by Tony's Fine Foods, Mike Hudson Distribution, Tomales Bay Foods, Peacock Cheese, LA Specialty, Chef's Warehouse and DPI.
