Sartori introduces limited-edition cinnamon, cognac cheeses for the holidays |

Sartori Company will be releasing a very limited quantity of two cheeses for the holidays: the new Cannella BellaVitano, aged at least 15 months and steeped in cinnamon liqueur, and Cognac BellaVitano, named 3rd best cheese in the world at the 2011 World Cheese Awards in the UK. Each wheel will be hand signed and numbered by Sartori Master Cheesemaker, Mike Matucheski.
Cannella BellaVitano, Sartori's newest Limited Edition cheese, was created by taking sweet, buttery BellaVitano, aged at least 15 months, and steeping it in a cinnamon liqueur. "The smells and flavor of cinnamon give people a feeling of warmth over the holidays which inspired me to create this unique holiday cheese," states Matucheski. "Some small pieces on top of a slice of warm apple pie make for a mouthwatering experience," he adds.

 Cognac BellaVitano is the most premium Limited Edition item. The cheese itself is extra-aged; it matures for at least 18 months, then is submerged in a premium Cognac and is only ready for sale when Sartori Master Cheesemakers believe it is just right.
The cheeses will be available at select specialty cheese shops. A limited supply of 4 oz. wedges will also be available on the Sartori website and in the 2012 on-line Limited Edition Gift Box.
