Chicago cheesemonger wins first-ever Comte Scholarship |

Lisa Futterman, a cheesemonger at Pastoral Artisan Cheese, Bread & Wine in Chicago, is the winner of the first-ever Comte Scholarship for American Cheese Society Certified Cheese Professionals(tm) (ACS CCPs). Futterman receives an all-expenses-paid trip to the Comte region of France, to learn first-hand about Comte cheese's unique history, production and region.
The contest was open to all ACS CCPs, an elite group of 121 who sat and passed the inaugural exam in 2012. Entrants to the competition were judged on the basis of an essay explaining why they would include Comte in a cheese selection.

 "I am very excited and proud to have won this scholarship," said Futterman. "The pool of entrants made the competition steep, and the prize is so wonderfully relevant to my Pastoral career."
Judges, who did not have access to the applicant's names or information, included Cathy Strange (Global Cheese Buyer, Whole Foods); Max McCalman (Maitre Fromager of Artisanal Premium Cheese Center and author); and Greg O'Neill (Board President of the American Cheese Society; and Owner of Pastoral Artisan Cheese, Bread & Wine).
Made exclusively in the Jura Mountain region of France, Comte is an artisanal cheese with AOC and PDO designations. Each wheel of Comte reflects a unique terroir, a season of production, and centuries of cheesemaking and affinage traditions.
