Cumin, wasabi, smoked tea included in McCormick's Flavor Forecast |

HUNT VALLEY, Md.--Spice giant McCormick announced its flavor pairings for the coming year here earlier this month, anticipating what tastes will be most influential in 2007.
Released annually since 2000, the Flavor Forecast showcases the flavors and culinary trends that consumers can expect to see in restaurants and stores. McCormick's own flavor experts, along with chefs, television personalities and cookbook authors, provided input on the flavor choices, according to a statement issued by McCormick.

 The 10 flavor pairings for 2007 are:
* Caramelized Garlic and Riesling Vinegar
* Clove and Green Apple
* Crystallized Ginger and Salted Pistachio
* Cumin and Apricot
* Lavender and Honey
* Sea Salt and Smoked Tea
* Tellicherry Black Pepper and Berry
* Toasted Mustard and Fennel Seeds
* Thyme and Tangerine
* Wasabi and Maple
These flavor pairings are also showcased on McCormick's Web site, www.mccormicks.com, along with two suggested recipes for each of the flavor pairings.
According to Laurie Harrsen, director of consumer communications at McCormick, preserving the flavor of each individual spice was important in considering the pairings. "Even staples like salt are now available in a diverse palette of flavor, color and texture," she said in a prepared statement. Harrsen also noted the influence of certain geographic influences on forecast. "Global cuisines, particularly those of North Africa, Asia and the Middle East, continue to drive our exploration of new foods and flavors," she said.
